OPRAH: Welcome to the Oprah Winfrey Show. On today’s show, we will be discussing celery . Celery is packed with nutrients like folic acid, B vitamins and potassium, is a great source of fiber, and is popular with dieters because it contains only 6 calories per stalk!
Celery has been getting a lot of attention lately, because it was # 2 on the EWG list of “dirtiest foods”.
Our panel of guests today include scientists, physicians, farmers and parents. I think you will find this an interesting show.
DR. HEINZ: Hello Oprah, my name is Dr. Fredrica Heinz and I have been a scientist at the EPA for 15 years. I have been involved in the study of fresh produce and their levels of contaminants.
Organophosphate compounds are commonly used on celery farms, and are the most widely used group of insecticides in the world.
Celery has some of the highest residuals of OP’s. It has no protective skin, so pesticides settle on the vegetable and are directly ingested by you.

DR. DIAMONDZ: Oprah, I am Dr.Crystal Diamondz and I am a neurologist. Organophosphates affect the nervous system by interfering with the ability of acetylcholine to regulate nerve impulses. If acetylcholine is not regulated properly the nerve impulses remain active longer than they should, overstimulating the nerves and muscles. Symptoms such as weakness or paralysis of the muscles are the result. In insects, the overstimulation of the nerves actually causes death.
A recent study conducted at the University of Montreal found that children with higher than average residual levels of OP’s in their urine were TWICE as likely to have ADHD.
RUBY: Oprah, my name is Ruby Smith and my 10 year old son, Doug, has ADHD. His nutritionist said it’s important to avoid pesticides , especially organophosphates which affect the nervous system. I buy organic whenever possible, but sometimes it is not available, or it is very expensive. Our son needs the nutrients these foods provide. It’s difficult to decide if the risks outweigh the benefits.
BRENDA: I am Brenda Watson and I want to do everything that is best for my children, so I decided to go natural and make all homemade baby food. Even though I buy organic, I’m paranoid, concerned, and losing sleep, because I don’t trust that these vegetables are safe.
I want to be SURE that the food I am feeding my babies is safe.
LESA MC CORMACK: I am Lesa Mc Cormack and my family has been in the celery farming business for 40 years and we are committed to providing a quality product.
Insects and weather pose the greatest risks to farm crops. The tarnished plant bugs and aphids that are attracted to celery’s fragrant leaves, will destroy our crops if we don’t kill them first. We use OP’s because they are inexpensive and effective on a variety of pests.
I understand there are risks in spraying these powerful chemicals on my celery plants. The alternative is not having any plants to sell.
CATHERINE MC CHRISTY: My name is Catherine Mc Christy and I have been working on the Mc Cormack farm for 10 years. I was suffering from wheezing, headaches and disorientation on days we sprayed. I was frightened by the warnings on the pesticide bottles, so I started to wear a mask. (hold up mask) I feel I am safer wearing the mask AND I’ve started a trend. Now all the farmers wear masks on the days we spray.
